Sweet Potato Recipes


Sweet Potato Biscuits
2 cups Bisquick
1 cup mashed sweet potato (best if not put thru a ricer)
1/3 cup sugar

Mix all ingredients by hand until the dough is smooth. Roll on a lightly floured surface to 1/2 inch thick. cut with a biscuit cutter. Bake at 450 deg F for 10-12 minutes.

Makes 1 dozen biscuits.

Sweet Potato Log Roll
3 eggs
3/4 cup all purpose flour
1/4 tsp salt
3/4 cup mashed cooked sweet potatoes
1tsp baking powder
3/4 tsp ground ginger
1 cup sugar
2 tsp cinnamon
1 cup chopped pecans
1 tsp lemon juice
1/4 tsp groung cloves
Powdered sugar

Grease and flour bottom and sides of a 15x10x2 inch jelly roll pan, line the bottom of pan with waxed paper.

Beat eggs at high speed until thick and lemon colored (about 5 minutes), gradually stir in sugar, beating 5 additional minutes. Continue beating and gradually add sweet potatoes and lemon juice.

Combine dry ingredients and stir unto sweet potato mixture. Pour batter into prepared pan, spreading evenly. Sprinkle with pecans. Bale at 375 deg F for 12 to 15 minutes or until done.
Sift powdwered sugar in a 15x10 inch rectangle on a linnen towel. When cake is done, immediately loosen from the sides of pan and turn out on sugar. Peel off waxed paper. Starting at the narrow end, roll cake and towel together, cool on a wire rack, seamside down. When cool, unroll cake and remove towel. Spread cake with filling and reroll. Chill until serving time. Yield 8-10 servings.
Log Roll Filling
1/4 cup softened marggarine or butter
1/4 tsp butter flavoring
1/2 tsp vanilla
1 cup powdered sugar
1/2 pkg (8oz) cream cheese
pinch salt
Combine butter and creamcheese, beating until light and fluffy. Add powdered sugar, flavorings and salt, beat until smooth.
Sweet Potato Bon Bons
1 lb dried apricots or peaches, finely chopped
4 cups coconut
2 cups chpooed toasted pecans
1 1/2 cups cooked sweet potato puree
1 can 14oz sweetened condensed milk
2 lbs powdered sugar

Mix all ingredients in large ball. Chill 2 hours or until firm enough to shape into 1 inch balls. These can be served with a pecan on top or dipped in white chocolate to coat. Store tightly covered in refrigerator.
Sweet Potato Pudding
1 can sweetened condensed milk
1 1/2 cups cold water
1 pkg instant vanilla pudding mix
1 cup cooked mashed sweet potatoes, sweetened
1 pt whipping cream, whipped
Vanilla wafers, crushed

Combine milk and water in mixing bowl.Add pudding mix, beat until well blended, add sweet potatoes, mix well. Chill 5 minutes. Fold in whipped cream until blended. put 1 cup mixture into a glass bowl top with crushed wafers. Repeat layering twice, ending with a pudding layer. Chill thoroughly.
Sweet Potato Cake
2 cups self rising flour
2 cups raw grated sweet potatoes
2 cups sugar
2 tsp cinnamon
4 eggs
1 1/2 cups wesson oil

Mix eggs, sweet potaoes, oil and sugar well, Add flour to mixture. Bake in 3 layers at 350 deg F until done. Allow layers to cool then apply icing.

Icing
1 box powdered sugar
1 stick margarine
1pkg (8oz) cream cheese
1 cup chopped pecans
1 tsp vanilla

Soften margarine and crean cheese, beat with sugar and vailla,then add pecans.
