Sweet Potato Recipes


Sweet Potato Muffins
1 stick margarine
1 1/2 cups sugar
1/2 cup brown sugar
2 eggs
1 1/4 cups mashed sweet potatoes
1 cup milk
2 cups self rising flour
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 cup chopped nuts

Cream butter and sugar, beat in eggs until fluffy. Mix in sweet potatoes and milk.

Sift dry ingredients together. Add dry ingredients and nuts all at once. Stir only until all flour is moistened. Bake in well greased muffin tins for 20 minutes at 400 deg F.
Sweet Potato Dessert
Crust

1 cup self rising flour
1 stick softened margarine
1 cup chopped nuts

Mix and bake in 9x13 pan at 350 deg F for 25 minutes

Filling

1 pkg (8oz) cream cheese
1 cup sugar
1 cup cool whip

Mix well. Spread on cooled crust.

Topping
1 1/2 cups cooked mashed sweet potatoes
1 cup sugar
1 beaten egg
1 stick margarine
1 tsp vanilla
1/4 tsp nutmeg

Mix all ingredients, cook 10 to 15 minutes on top of stove. Stiring often. Cool and spread on top of cream cheese layer. Keep refrigerated.
Sweet Potato Fruit Salad
Sweet Potato Pie
1 1/2 cups cooked sweet potatoes
3/4 cup Eagle Brand Milk
1 cup Sugar
1/4 tsp allspice
1/2 tsp vanilla
2 eggs
1/2 stick margarine
1/2 tsp cinnamon
a dash ground ginger
1/2 cup chopped nuts (optional)
1/4 cup shredded coconut (optional)

Mix all ingredients well. Pour into pie crust. Bake at 350 deg F for 30 to 45 minutes. Makes 2 pies.

Sweet Potato
Sausage Balls
3 cups Bisquick
1 cup sharp chedder cheese, shredded
2 cups mashed sweet potatoes
1 lb sausage

Combine all ingredients well. Roll into 1 inch balls and place on greased sheet pan. Bake at 350 deg F for 20 minutes until brown.
Sweet Potato
Cheese Cake
3 pkg (8oz) cream cheese
1 1/2 cups cooked sweet potatoes
2 cups sugar
4 eggs
1/2 cup flour
1-2 tsp apple pie spice
1-2 tsp cinnamon
1-2 tsp nutmeg
Mix all ingredients together well and pour into a 9" spring form pan sprayed with cooking spray and coated with graham cracker crumbs on all sides and bottom.

Bake in a preheated 350 deg F oven for 45-50 minutes. Cool completely.

Topping

1 can (14 oz) sweetened condensed milk
1 cup chopped nuts
1 cup shredded coconut

Mix together and spread on cheesecake. Place in freezer. Take out 30 minutes before serving.
Sweet Potato Tea Bread
3 cups sugar
1 cup vegetable oil
3 1/2 cups self-rising flour
2 cups sweet potatoes (mashed)
2/3 cup water
4 eggs beaten
1 cup raisins (coat with flour)
1 cup chopped nuts(coat with flour)
3 teaspoons cinnamon
2 teaspoons nutmeg
2 teaspoons vanilla

Cream sugar and oil. Add eggs, sweet potatoes and water. Gradually add flour and seasonongs. Mix in raisins and nuts.

Spray 2 loaf pans with cooking spray and coat with folur. pour in mixture.

Bake at 325 deg for 1 hour or intil tests done. Cool and glaze.

Glaze: Milk, confectioners sugar, vanilla and lemon juice.
