A Few Sweet Potato Facts:
There are 2 accepted spellings for this vegetable, Sweet Potato or Sweetpotato.

Sweet Potatoes are low in sodium, fat- and cholesterol-free, and when eaten with the skin have more fiber than oatmeal.

One medium Sweet Potato has almost twice the daily recommended allowance of Vitamin A, 42 percent of the recommendation for VitaminC and 4 times the RDA for Bete-carotene.

Sweet Potatoes are native to America. Native Indians were growing Sweet Potatoes before the arrival of Columbus in 1492.

More than 40 percent of the national supply of Sweet Potatoes comes from North Carolina.

The Sweet Potato is North Carolina's State Vegetable.
